You can make tame animals available as pets here. Some dwarves like to keep a certain type of animal as a pet. You can view pet preferences in the unit profile.
Unit Profiles
If an animal is not somebody's pet, you can also designate it to be slaughtered. The slaughter occurs at the butcher's shop.
